Before I tried this recipe, I hadn’t ever purchased Chef Boyardee’s pasta in a can before.  I really wasn’t sure about it.  I don’t know why – I mean, I have no problem with chili in a can or soup in a can, or Macaroni and Cheese in a box.   What I didn’t realize is that these meals have no preservatives!  If I had known, I wouldn’t have been so hesitant to try it.

Recently I was chosen to work with Chef Boyardee and Mom Central to try one of their new quick and easy main dish recipes featuring their canned products.  I was more than ready and willing to give them a try!  A couple of my mom friends told me that they really liked Chef Boyardee, and I couldn’t wait to try it out myself.  :)

There are five new recipes on the Chef Boyardee website including Cheeseburger-roni, Taco-roni, Chili-roni, Pepperoni Spaghetti Bake, and Ravioli Lasagna.  The attraction for these recipes is that they are very quickly thrown together, are easy enough for the kids to help with, and they’re tasty!

Of course, they had me at quick.  ;-)

These recipes are so fuss-free, it’s crazy.  No boiling up pasta, no making your own ravioli, it’s as easy as throwing it in a pan and stirring.  And let’s face it, we all need those quick recipes as back-ups.

So yesterday was one of those days, we were exhausted from the week and I was not in the mood to cook.  If I hadn’t had this on hand, I probably would have resorted to take-out.  I’m glad I didn’t, though, because this was really yummy and much less expensive!  I decided on the Taco-roni recipe because our family is really big on Mexican food around here.  My husband would eat it for every meal if he could.

Taco-roni

Ingredients:
2 cans Chef Boyardee Beefaroni
1 can Hunt’s Diced Tomatoes, Drained
1 can Whole Black Beans, Drained and Rinsed
1 cup Frozen Whole Kernel Corn
1 teaspoon Ground Cumin
1/4 cup Shredded Reduced Fat Mexican Cheese Blend
1/2 cup Broken Yellow Tortilla Chips

(My variation used Cheddar Cheese, Red Tortilla Chips, and I added Ground Beef)

(Also note that I used Fire Roasted Diced Tomatoes – they were really good!  Recommended.)

Directions:

1.  Place Beefaroni, drained tomatoes, beans, corn and cumin in large saucepan; stir to combine.

2.  Bring to a boil over medium-high heat. Reduce heat, cover and simmer 15 minutes. Sprinkle with cheese and broken chips just before serving.

This was SO surprisingly delicious!  I really, really liked it, and my toddler and husband gave it two thumbs up.  Yes, I will most definitely be making this again.  I still can’t believe how easy it was and how good it tasted.  The only thing I want to do different next time is buy the Whole Grain Beefaroni, just for added nutrition.  You guys have to try this!
