Ive been trying at least two or three new recipes every week since I started planning our meals, and Im excited about sharing our favorites with you! Most of them have been Crockpot meals because I love the simplicity of dumping ingredients into my lovely slow cooker and having a meal practically make itself in hours. Heres one we tried last night, inspired by this recipe. I LOVED it! I added a few things, like bacon and extra potato and carrot and it was SO good.

Oh, and its also been toddler- and husband-approved as well. 😉

Hearty Crockpot Bacon, Lentil & Potato Soup

5 slices bacon, chopped into small pieces
1 pound dried lentils, sorted and rinsed
1 cup mixed beans (can be found in bulk health section or in bags with beans)
4 cups vegetable, chicken, or beef broth (I used bullion cubes)
4 carrots, chopped into small pieces
2-3 potatoes, chopped into small pieces (I didnt peel them)
1 small onion, chopped
4 cups water
1 teaspoon dried thyme leaves
Salt & pepper to taste

Throw all ingredients into Crockpot. Stir. Cover, cook on low for 8-9 hours or high for 4-5 hours or until lentils are tender. Stir well before serving, add salt or whatever is needed to make it taste the way you like it, and enjoy! I recommend serving with buttered slices of Italian or French bread. Yum!
