It all started when I was walking through Costco and these jars of gourmet butternut squash pasta sauce practically jumped out of their shelves trying to get my attention.

I was intrigued, curious, and knew I had to try it.  So of course it went into my cart.  Doesn’t it look good?

Slow Cooker Spinach Beef Lasagna with Butternut Squash Sauce - Recipe

My lasagna recipe is going to use this delicious gourmet pasta sauce that comes in a jar.  But in case you haven’t seen these in your Costco and can’t locate them anywhere I am here to assuage your fears and tell you that you can make butternut squash sauce yourself!

I know you’re super excited at the prospect.  ;-)

Slow Cooker Spinach Beef Lasagna With Butternut Squash Sauce

Ingredients:

1 25-ounce jar of Butternut Squash Pasta Sauce
(or 3-4 cups of homemade butternut squash sauce)
1 can of roasted diced tomatoes, drained
1 package fresh spinach
3 cups cottage cheese
4 cups shredded cheese
ground beef
whole wheat lasagna noodles, uncooked

Directions:

1.  Brown ground beef, season with salt and pepper.

2.  Layer the following ingredients in your slow cooker:  Lasagna noodles, sauce, tomatoes, cottage cheese, spinach, cheese, ground beef – repeat.  The top layer of noodles should be covered by a layer of sauce, ground beef, spinach, and cheese.

3.  Cover and cook in slow cooker on high for 3-4 hours or low for 6-8 hours.

  • This is a little different from what I’m used to, I have never had butternut squash sauce. The recipe looks easy to make though. I might have to give it a try.

  • looks good an not too hard to make,,may try this for the grandkids
