It all started when I was walking through Costco and these jars of gourmet butternut squash pasta sauce practically jumped out of their shelves trying to get my attention.
I was intrigued, curious, and knew I had to try it. So of course it went into my cart. Doesn’t it look good?
My lasagna recipe is going to use this delicious gourmet pasta sauce that comes in a jar. But in case you haven’t seen these in your Costco and can’t locate them anywhere I am here to assuage your fears and tell you that you can make butternut squash sauce yourself!

Slow Cooker Spinach Beef Lasagna With Butternut Squash Sauce
1 25-ounce jar of Butternut Squash Pasta Sauce
(or 3-4 cups of homemade butternut squash sauce)
1 can of roasted diced tomatoes, drained
1 package fresh spinach
3 cups cottage cheese
4 cups shredded cheese
whole wheat lasagna noodles, uncooked
1. Brown ground beef, season with salt and pepper.
2. Layer the following ingredients in your slow cooker: Lasagna noodles, sauce, tomatoes, cottage cheese, spinach, cheese, ground beef – repeat. The top layer of noodles should be covered by a layer of sauce, ground beef, spinach, and cheese.
3. Cover and cook in slow cooker on high for 3-4 hours or low for 6-8 hours.
Well, that was exhausting. ;-) Not!
